When is Delicious ?

The word delicious is one of those that I will say comes out of a personal experience of food. You think you understand it — until something surprises you. Usually, it’s a familiar meal. Something you’ve had many times before. But when it’s made just right, and eaten at the right moment, it suddenly becomes unforgettable. That’s what makes something truly delicious — not just the taste, but the time and the state you’re in when you receive it.
I think about fufu . I enjoy it best when it’s warm, smooth, and served with the kind of soup that has depth — like a rich palm nut soup that’s been bubbling on the fire long enough to feel like a hug. It fills me in more ways than one. It’s not a new taste, but it can still be a new experience, depending on how present I am when I eat it.
Or jollof. I don’t just make it — I try to get it right. When the rice soaks in the tomato stew and that flavor really settles, something changes. Add the slightest crunch at the bottom of the pot, and now you’re not just eating. You’re remembering something. Maybe a party, maybe family, maybe nothing at all — just the joy of eating well.
Even a chocolate bar or a fruit can be delicious when your mind is clear, your stomach ready, and your senses awake. Some grapes on a hot day. A piece of chocolate when the world feels too sharp. Those small moments carry their own kind of delight.
But the most delicious thing I ate?

One of those moments was when I had grilled, spiced mushrooms — something so simple, but done in a way I didn’t expect. They looked like kabobs, but instead of meat, there were mushrooms threaded on the stick, seasoned with spice and earth all at once. I didn’t expect much. But after one bite, I paused. It had everything — That small bite has stayed with me longer as I remember now.

That’s the thing about deliciousness — Sometimes, it’s grilled mushrooms on a stick. Sometimes, it’s just you, paying attention to the right bite, at the right time.
