What food would you say is your specialty?

Jollof Rice — The One Pot

If there’s one dish that I know how it’s Jollof rice. Bright, bold, and packed with flavor — Jollof has a way of making every bite feel like a small richness.

Here’s what you’ll need:

3 cups of rice (long-grain or basmati works fine)

2 large tomatoes (blended smooth)

1/4 cup tomato paste

1 onion (chopped)

hot sauce

chicken or protein

Salt to taste

1/4 cup cooking oil

Optional: cooked chicken — if you want to stretch it


My quick way to make it:
I start with oil in a pot, add my onions and hotsauce, then stir in the tomato paste until it smells good. That’s how you know the flavor is waking up. Then I pour in my blended tomatoes and salt — and let it simmer until it thickens.


Next, I add my meat, then pour in the rice. Stir it up, cover, and let it cook on low heat until the rice is soft and colored with that deep reddish-orange glow. Once it’s done, I fluff it up and serve — simple and satisfying.

Cooking Jollof is one thing, but sharing it is the real joy. And the quicker you make it, the faster you can sit down, eat, laugh, and enjoy it.
